Beyond protecting the fabric, they give you a firm point to squeeze the bike with your legs. They sit on the HF high-frequency embossed base, so the rest of the surface already holds better than plain fabric. The gripper fabric is 1.2 mm (0.05 in), waterproof, polyester-backed and double-stitched around the perimeter.
